The ingredients for Nip's Famous Meatloaf are:

1 lb ground beef, lean 93%
1 lb sauage, Jimmy Dean, Reduced Fat
1 sleave fat free saltine crackers, crushed (Approx 35)
1/2 c. ketchup
1/4 c. chili sauce
1 egg
1 onion, chopped
1 green bell pepper, chopped (optional - info. not added)
1/4 tsp. salt
1/2 tsp. black pepper

Here is how you make Nip's Famous Meatloaf:

In microwave safe bowl stir chopped onions and bell peppers, add water till slightly covered, cover bowl with lid or cling wrap and cook on high for 8 minutes.In large mixing bowl add all remaining ingredients. Rinse onions and bell peppers in cold water to cool them off, drain, and add to meat mixture. Best to use your hands to mix everything.Divide meat mixture into 12 muffins. I usually take 2 tbsp. roll in a ball than push down in muffin tin.Bake at 350 degrees for 30 minutes. Then I flip the muffins over in the pan and bake an additional 5-7 minutes.Place meatloaf muffins on paper towel to drain any excess fat.Serving Size:?Makes 14 muffins, serving size 1 muffin*Tip usually place the two extra muffins in tiny cake pan to bake next to muffin tin.
