This is a concoction of from the depths of my own mind. This is the best meatloaf I've had and when I make it for people, they always come back for more. There's rarely any left. Serve it with Spinach; salad, beans whatever and you can have a nice meal.

32oz Jimmy Dean Pork Sausage
32oz 93% lean Ground turkey
1 Lb Red Peppers (seeded & cleaned) cust into 1/2 x 1/2 chunks
1 Large yellow onion large dice
2 - 3 stalks small celrey
20 Tsp BBQ sauce (about 1/2 - 2/3 bottle)
1 tube Ritz crackers
2 eggs
4 Tsp Olive oil


How Do I Make Barneys Meatloaf?

Here is how you make Barneys Meatloaf:

Dice the onion, Celery, Red Peppers. Saute using the Olive Oil: The Onions until caramelized (8-10 mins) The Celery until almost tender (6-8 mins) The Red Pepper until almost soft (6-8) mins Note: be sure to stir this stuffCrush the Ritz Crackers (I do it while they are still in the wax paper tube they came in.Put the sausage and turkey into a large mixing bowl (I use a 6 quart Mixer) and blend on slow or hand mix. Add the BBQ sauce, Sauteed Onions, Celery & PeppersToss in the Eggs mix wellAdd the crackers and again mix well ( you may need a little more or less to get the right consistency. You want the mixture to be able to be able to hold its shape but not stiff).Divide mixture into 2 or 4 equal parts and form loafs. Pre-heat oven to 350 and bake between 45 - 90 mins. Remove from oven, let rest for 8 mins, then serve. Serving size = 100 - 200g (1/4 - 1/2 Lb; or about 2" x 3" slice depending how you formed your loaf) Note; I frequently freeze the loafs not cooked, and have them available for another weeks cooking.
