1 Tbsp. salt
1 pound ground turkey, 93% lean

1 green pepper, diced
1 medium onion, diced
1 can (6 oz) tomato paste
1 can (15-16 oz.) tomato sauce
2 Tbsp red wine vinegar
2 Tbsp. chopped fresh basil (or 1 Tbsp. dried basil)
1 Tbsp. chopped fresh oregano (or 1/2 Tbsp. dried oregano)
1 large egg
2 cups 1% low fat cottage cheese
2 Tbsp. chopped fresh parsley (or 1 Tbsp. dried parsley)
1x10 oz. package frozen spinach, thawed and drained well
1 pound fresh mushrooms, sliced
8 oz mozzarella cheese (part skim milk)
8 oz grated parmesan cheese

Here is how you make Bubu's No Noodle Lasagne:

Preheat oven to 325 degrees and grease a 9 x 3 baking pan.Slice zucchini lengthwise into very thin strips. Sprinkle lightly with salt and set aside in strainer to drain.Brown ground turkey and black pepper for about 5 minutes over medium heat. Add green pepper and onion; cook and stir until meat is cooked through. Stir in tomato paste, tomato sauce, vinegar, basil and oregano. Bring to a boil; reduce heat and simmer for about 20 minutes, stirring occasionally.Combine egg, cottage cheese, and parsley in small bowl.Spread half of the meat sauce in bottom of prepared pan. Layer half of the zucchini slices, followed by half the cottage cheese mixture, then all of the mushrooms, and half the mozzarella cheese. Repeat layers of meat sauce, zucchini, cottage cheese mixture, and mozzarella. Spread Parmesan cheese over top and cover with foil.Bake for 45 minutes. Remove foil, increase oven temperature to 350 degrees and bake an additional 15 minutes.
