Preheat oven to 425 degrees.Mix Nutmeg, Cinnamon, Cumin and Sage.Slit pork loins lengthwise but not through.Rub spice mix onto both loins, inside and out.Melt butter in oven-safe pan over medium-high heat.Sear the meat until lightly browned on each side, remove pan from heat.Turn pork so the sliced side is facing up. Using tongs (the meat is HOT), stuff each loin with 1 cup of the frozen cherries, distributing evenly.Replace meat in the pan and bake for 20-30 minutes, or until internal temperature measures 160 degrees.Pull meat from plan and allow to rest on cutting board.Sprinkle cornstarch over pan and deglaze with the 1 cup chicken broth over medium heat.
