Preheat oven to 425 degrees.[1] Trim and core fennel bulb. Cut bulb into thin wedges andset aside. Sprinkle pork with rosemary and salt and pepper.In a skillet, heat oil over medium heat and brown pork on allsides. Remove pork and place in a baking dish*.[2] Add fennel, onion and garlic to skillet. Cook about 4minutes until lightly browned. Remove from heat, add broth,vermouth and sour cream. Return to heat to just boiling,stirring occasionally. Pour over pork in baking dish, stirringto level out the mixture around the pork.[3] Roast, uncovered, about 30 minutes until slightly pink incenter (165 degrees).
