Keep the bok choi separate. Pour boiling water over udon noodles in a bowl. In a frying pan over med-high heat, fry the white portion of the bok choi. Fry, stirring occasionally until the whites begin to become transparent. Remove bok choi from frying pan and add pork. Let the pork brown in the frying pan, and then begin to break it up into small pieces, stirring only infrequently. Once the pork is no longer pink, drain the noodles in a colander and add to the pan. Add the remaining veggies, and the soy sauce and mirin. Option to add 1 tsp of red chilies at this time if you like spice. Saute the whole thing, scraping up any browned bits from the bottom of the pan, then serve. Option to add cilantro, thinly sliced green onions or sesame seeds as garnish.
