Boil peeled potatoes until done, just as you would for your regular potatoes. Drain, but reserve and put back in about 1/4 cup of the cooking liquid. Then add hot buttermilk and melted butter. Mash the potatoes with the potato masher, add salt and pepper to taste. Cutting out all but 3 tbsp of butter cuts many calories, but still gives the potatoes buttery taste.
