This is my brother-in-law's quiche recipe which quickly became a family favourite. Make 2 quiches and freeze the 2nd in the box for the pie shells - it reheats wonderfully for a nice easy meal on one of those busy days. If you want to make only 1, cut the recipe in half.

What Are The Ingredients For Marty's Quiche Recipe?

The ingredients for Marty's Quiche are:

8 large eggs
1 can of no-fat evaporated milk (370ml)
2 tsp Worcestershire sauce
2 deep dish tender-flake frozen pie shells
12 mushrooms
1 bunch of asparagus
1 onion
12 strips of bacon (I use the low sodium MC frozen bacon)
1 small block of swiss cheese (200g)


How Do I Make Marty's Quiche?

Here is how you make Marty's Quiche:

1 - Open up the box for the pie shells and take them out. Carefully set aside the wax paper and box that they came with so that you can use it to freeze your second quiche.2 - Cook the bacon, and set aside on paper towels to cool.3 - Wash and slice your mushrooms and layer them on the bottom of the pie shells.4 - Wash and slice your asparagus and layer them on top of the mushrooms in your pie shells.5 - Dice your onion and layer it on top of of the asparagus.6 - Slice the bacon and layer it on top of the onions7 - Grate the swiss cheese and spread as the top layer.8 - Preheat your oven to 350F with the rack in the middle.9 - In a large bowl (or measuring cup) add all 8 eggs, evaporated milk, and Worcestershire sauce. Wisk together until well mixed.10 - Place pie crusts into a large baking sheet. This helps catch any drips and spills.11 - Slowly pour the egg mixture into each of the pie crusts - it can run off if it is poured too quickly. Wipe up any drips into the baking pan.12 - Bake at 350 for approximately 1 hour. I check after 45 min to make sure that it is cooked through - there should be no liquid when it is fully cooked.13 - Eat the first quiche and let the 2nd cool. When cooled, cover the top in the wax paper you saved from the box, wrap tightly in plastic wrap and put it in the box for the pie shells. Place in freezer. To reheat, you can place from frozen in the oven for about 45 min - or - unthaw first in the fridge and warm for about 20 min in the oven.Number of Servings: 12Recipe submitted by SparkPeople user KAKOU226.
