2 cups brown rice (uncooked)
1 can black beans (1.75 cups)
.5 Yellow Onion (large), chopped
.5 cup broccoli, chopped
.5 cup celery, chopped
2-3 cloves garlic, minced
2 eggs
1 cube vegetable bullion
1.5 tbsp butter or margarine
2 tsp salt


How Do I Make Black Bean and Veggie Rice?

Here is how you make Black Bean and Veggie Rice:

Bring 10 cups of water to boil. Add rice, butter & salt. Boil uncovered for 30 mins.While rice is cooking: chop onions, broccoli and celery. Drain and rinse black beans. Mince garlic (or use pre-minced garlic, 1-1.5 tsp). Boil 2 cups water and dissolve bullion cube.When rice is finished, strain it and return it to pot. On med-lo heat, stir in onions, broccoli, celery, garlic and bullion. Add eggs and QUICKLY stir them in. Add black beans last, cook for 5 min stirring often.
