2 cups of Minute Instant Brown Rice
1 can Kuner's Black Beans, no salt added, drained after heating through.
2 small onions, chopped
1 1/2 red peppers, chopped
2 jalapeno peppers, sliced
1/2 cup Pace Medium Salsa
1/4 cup cilantro chopped
zest of I lime


How Do I Make Vegetarian Black Bean Rice Bowl?

Here is how you make Vegetarian Black Bean Rice Bowl:

Cook Minute Brown Rice as directed, when you stir the rice and remove from heat add the cilantro and the lime zest.Warm black beans in a sauce pan. Drain beans before mixing with rest of ingredients.Spray a large non stick skillet with non stick cooking spray. Heat to medium high heat. Add onions, red peppers, and jalapeno peppers. Sauted until soft and starting to brown. Add the rice mixture and beans to pan and remove from heat. Stir in salsa. If you want you can top with non fat sour cream or non fat plain yogurt.
