Here is how you make Coconut Black Beans and Rice:

Makes 10 3/4-cup servingsBoil water and add rinsed rice. Stir and reduce to simmer. Allow to cook for 20 minutes.While rice is cooking, chop scallions and sauté in a saucepan. Open cans and combine coconut milk, black beans, peas,and cashews to scallions. Turn heat down to low and allow to simmer until rice is done. Serve bean mixture over rice.
