Here is how you make Sittie's Red beans and Rice:

1. Soak kidney beans overnight (or use your quick-soak method of choice)2. Slice sausage into medallions3. Dice all vegetables4. in a large, heavy stock pot, brown sausage over medium heat until grease is released5. add all vegetables and cook over medium-low heat until beginning to soften and become very fragrant6. add beans & soaking water, + enough water to float all ingredients7. Add bay leaf and enough Tony's to turn top of water orange. 8. Bring to boil, then reduce to simmer, coverd, for 45-60 minutes9. Once beans are soft, remove 1/4-1/2 of beans and smash using a spoon or food processor. Return to pot and stir thoroughly to thicken.10. Simmer, uncovered, until beans have reached a thick soup consistency. Serve over rice with Tony's to taste.Makes 8 dinner-portion servings.
