How Do I Make Eileen's Fiesta Rice with Beef and Beans?

Here is how you make Eileen's Fiesta Rice with Beef and Beans:

This is my take on a recipe that came from another website. I prefer to use 93 to 96% lean ground beef. You can also use a pound of chicken breast, cut into bite sized pieces. I prepare this in a standard Crock Pot. You simply deposit all ingredients EXCEPT THE RICE into the pot, set on Low, and leave for 6-7 hours. When it is ready, add 1 cup of converted (parboiled) rice, stir, cover, and let cook an additional 30 minutes. Turn off crock pot, stir again, let sit for a few minutes and rice will absorb excess liquid. Makes 6 GENEROUS portions, or more, smaller portions.Serving Size: Makes 6, 2 cup servings, or 12, 1 cup servings.Number of Servings: 6Recipe submitted by SparkPeople user EMPATHICCELT.
