Melt butter alternative in skillet. Add onion, almonds, pepper and carrots. Stir in curry powder and salt and pepper to taste. Cook and stir over medium heat til onion and red pepper are tender (carrots will still be semi-crunchy - if you want them soft, microwave with 1 tbsp water for approx 10 minutes before adding to mixture in frying pan).
