Here is how you make Eggs and rice:

Pre-cook rice the day before or use leftover rice or it's ok if cooked just before making the dish if you have to. Cut onions to small cubes.In a wok, put oil and onions and cook until onions are see though (done). Put rice and cubes of spam into wok and heat until hot stirring occasionally.Meanwhile whip up the eggs with a whisk or fork as if you're going to make scrambled eggs. Add salt and pepper to the raw eggs along with a 1/4 cup very cold water. Make a hole in the center of the rice and pour in egg mixture. Add frozen peas around the inside perimeter of the pot (center free of peas - eggs in center). Cover and check every 3 to 5 minutes to make sure nothing is burning. When the eggs are mostly cooked and fluffy then mix into the rice thoroughly. Return the cover and let the mixture continue to heat until eggs and peas are done.
