Cook rice beforehand and refrigerate. When ready to assemble meal, dice onion and saute in olive oil for 3 minutes. Add carrots and saute for 2 more minutes. Add garlic, seranno pepper, red pepper flakes (if using canned beans make sure to rinse before adding), peas and corn and cook for 2 minutes. Add kidney beans. Cook for another 3 minutes.
