The ingredients for Mom's Fried Rice are:

· 6-8 eggs
· ½- ¾ lb ham or turkey ham, or any other protein, diced into ½ inch cubes.
· ½ of a one-pound package frozen peas and carrots mix
· 4 cups cooked white rice (day-old, leftover white or brown rice)
· ½ teaspoon salt
· 4 Tablespoons soy sauce (or more or less, to taste)
· Vegetable or olive oil

Here is how you make Mom's Fried Rice:

As with any family recipe, all of the measurements are eyeballed, so don't worry about measuring exactly. While cooking, stop to taste, and use more of less of each ingredient to your liking, and in this particular recipe, feel free to substitute any type of protein for the ham. Some suggestions would be beef, pork, or chicken cut in the same way as the ham in the recipe, or even shrimp, which can be left whole. The only thing I would suggest is to not use fish, only because it does not hold up well when mixing into the rest of the ingredients. If you are using a raw meat, use the same cooking method as described for the eggs: season well with salt (and pepper), cook until done separately in the same wok after you have cooked the eggs, and set aside to add back into the peas and carrots mix.As far as the rice, day-old rice is preferred because it is a little bit dried out and will absorb the flavors of the other ingredients it is being cooked with. However, don't use rice that is hard and has been sitting around for days. And freshly cooked rice is a little too moist to use; you will end up with mushy fried rice.In a large wok, heat just enough oil to coat the bottom and half way up the sides of the wok, swirling to coat well. Add the salt to the eggs, beat well, pour the eggs into the wok, and stir to cook until done. (Basically, you will have scrambled eggs.) Remove from wok and set aside.In the same wok, heat a little more oil, and cook the peas and carrots until tender, about 2-3 minutes. Add the ham/turkey ham, and cook long enough to heat the ham through, about 2-3 minutes. Add in the rice, and toss to mix well with the peas, carrots, and ham. Add soy sauce and mix to coat the rice well, cooking to heat through, about 5 minutes. Add the eggs back in and mix well.
