Heat oil in saucepan on a high/med heatAdd bacon and cook for 5 minutes then add onions, cook for 3 minutes. Add garlic, cook for 1 minute.Put in soy sauce and oyster sauce to taste and let bubble for 30 seconds to a minute.Add rice (thats been seperated so no clumps) and stir gently but mix thoroughly. Heat through.Make a well in the middle of the rice and pour in the eggs. Cook eggs through and then break up egg and mix through rice.Leave on the stove for another 5 or 6 minutes, stirring constantly.Add shallots, stir until mixed and heat for another minute.
