Add the oil to a 10in pan. Medium high flame. When oil is hot add the tomatoes, onions, chicken boullion, and rice. Fry rice until it's toasty and brown, stirring often. Add the 2 cups of water, wait until it boils then turn down down the flame to low. Cover and simmer for 20 minutes. Remove from heat. Serve while hot.
