In non-stick large frying pan add all of the ingredients except water, rice and nuts; saute stirring constantly until all the vegetables are tender and most of the water from the vegetables has evaporated. Mix in water and bring to boil. Stir in rice, return to boil. Reduce heat to low; cover and simmer 5 minutes. Remove from heat and stir; cover. Let stand 5 minutes.
