1 can red kidney beans (or Black Eyed- Peas)
2 tsp ground thyme
3 tbsp margarine (or lite margarine)
2 tbsp onion powder
black pepper to taste


How Do I Make Bermudian Peas and Rice?

Here is how you make Bermudian Peas and Rice:

Boil 6 cups of water and dissolve 4 boullion cubes.In a pot add 5 cups of white rice and 5 3/4 cups of boiling boullion mixture.Drain and rinse beans (kidney or black eyed- peas) add to rice.add onion powder and thyme.Cook rice according to package. (approx. 20 minutes) Most of the water will cook out.Turn out flame, add margarine and black pepper and stir.Cover rice with tight lid for 5-10 minutes until all liquid evaporates.Makes 10 - 12 1/2 cup servings.(note: traditionally meat such as bacon, Chirozo or pork are added to give added flavor and is optional but will change the nutritional value of the dish)Number of Servings: 10Recipe submitted by SparkPeople user JAHZARALORI.
