1 small can (7 oz) Hormel SPAM Lite
1 can (15 oz) Green Beans French style
2 Cups White Rice

CHEESE SAUCE:
1 T Cornstarch
4 T Blue Bonnet Light Margarine
1 C Fat Free Milk
1 Cups Cheddar or Colby Cheese, Low Fat, shredded


How Do I Make Spam and Rice?

Here is how you make Spam and Rice:

Prepare rice according to package directions. Dice spam into cubes. Place in medium saucepan and add green beans with half the juice in can. Simmer over medium low heat for 8-10 minutes, covered. Drain.To make sauce: In a small saucepan, combine cornstarch and butter over very low heat until butter is melted (be sure to not let this burn in the bottom of the pan). Slowly stir in milk with a wire whisk, and increase to medium heat. Stir occasionally and bring to a small rolling boil. Once boiling, stir in the cheese. Keep stirring until sauce has thickened (about 2-3 minutes). Once thickened, turn burner off. (The sauce is very hard to master - it has taken me years!).Serve as follows: Place 1/2 cup of rice in a bowl, then top with 1/2 cup spam/bean mixture, and ladel 2-3 tablespoons cheese sauce on top.
