1 medium (4-1/8" long) Scallions, raw rinsed and chopped

Here is how you make Cathy's Spanish Rice:

Brown ground beef, drain. Set aside. Prepare rice according to directions using the Rotel diced tomatoes, water, and the margarine. Stir in the ground beef, and corn (drain the corn first). Sprinkle with cheese. I stirred in drained and rinsed black beans separately into mine (hubby doesn't like black beans).Serving Size: Makes 4 large servings
