Soak rice in rinse water for 15-30 minutes.Place in heavy pot with the water.Heat to boiling, Cover.Turn down to Medium heat and leave for 5 minutes.Turn down to (very) LOW and leave steaming for 10 minutes.Turn OFF and leave to continue steaming for another 10-15 minutes.Turn out into a large bowl.Add seasoned vinegar and fan rice to cool it quickly.Serve with smoked salmon or stir in Japanese scrambled egg and some vegetables diced small.Top with a bit of Nori if you wish.Number of Servings: 3Recipe submitted by SparkPeople user URSYL153.
