Heat EVOO in a pot or 2-4 inch deep frying pan.Saute scallions for at least 1 minute.Toss in mushrooms and saute for 1 minute and season as desired. Toss in drained tomatoes and cook for 1 minute.Add veggie stock and bring to a boil.
