Here is how you make Radicchio Risotto:

saute the onion and garlic in 1 tbsp of olive oil until soft. Add the rice and stir constantly for 1-2 minutes. Add the white wine and simmer until absorbed into the wine. In a separate pan simmer the chicken stock. Add the radicchio to the rice and add 1 ladle of chicken stock. Stir occasionally until the liquid is absorbed into the rice. Continue this until the chicken stock is gone.
