How Do I Make Risotto?

Here is how you make Risotto:

Saute shallot in olive oil until soft.(Add mushrooms if you like at this time, too). Add rice and stir until there is a white dot visible in each grain. Add white wine and stir until absorbed. Add broth one ladle at a time and stir after each ladling until all of the broth has been absorbed (20-30 minutes on low-medium heat). When all broth has been added, rice should be tender, add and stir well parmesan cheese. Taste and add salt and pepper to taste.
