Here is how you make Simple seafood risotto:

1. Peel and tummy slice carrots. Cut spring onion into half inch pieces. Slice mushrooms.2. Cook corn and carrots in 3 cups unsalted water. Leave just simmering and don't drain.3. Heat olivio and half the butter in a heavy bottomed pan. Add in the onion, mushrooms, and jalapeno. Cook and stir until softened.4. Add in uncooked rice. Stir constantly for several minutes, until it begins to stick to the pan. Add 2 ladles liquid from the simmering carrots and corn.5.
