3 tsp olive oil
1 cup of dry red lentils
2 cups water
1 28oz can of tomatoes
1 onion, chopped
3 cloves garlic, crushed
sprigs of fresh thyme
springs of fresh savory
salt and pepper to taste
1 cup of cooked pumpkin (or other squash), cooked and pureed

Here is how you make Lentil Pasta Sauce:

Heat olive oil on medium heat and cook the onion and garlic until soft. Add two cups of water and the lentils. Tie the thyme and savory sprigs and add to the mixture. Bring to a boil. Reduce to simmer and cook for about 20 minutes or until the lentils are very soft and the water is almost gone. Add the tomatoes. Cook for another 10 minutes. Add the pumpkin and puree the entire sauce. Add salt and pepper to taste.
