1/2 med onion, diced
1 tablespoon peanut oil
1/3 cup white wine
3 cups fresh spinach
1/2 cup low fat cream cheese
1 cup fat free evaporated milk
1/4 cup shredded parmesan cheese

Here is how you make Creamy Spinach Sauce:

Saute garlic and onion in peanut oil over low heat for 2 minutes.Add wine, bring to a boil. Add spinach and reduce heat to medium-low.Stir in cream cheese until melted.Add milk, increase heat to medium high and stir until sauce is smooth and heated through.Remove from heat, add cheese and stir until cheese melts and sauce is well combined.
