16 oz raw shrimp, pealed and cleaned
1 medium onion, cut into small wedges
1 red bell pepper, cut into small wedges
3 cloves garlic, minced (more if desired)
1 jalapeno pepper, seeds removed, diced small (as much as you desire for heat)
2 TBSP fish sauce
1 TBSP light soy sauce
1 TBSP water
1 TBSP Brown sugar
Fresh Basil--25 leaves or 1 cup packed coarsely chopped (if you don't have fresh basil don't even bother with this recipe...it DOES NOT WORK with dried basil)
1 TBSP peanut oil

I serve over rice noodles but it would be great with white or brown rice

Here is how you make Thai Basil Shrimp with onion and red pepper:

Chop and prepare all your ingredients and sides (rice/noodles). Once the cooking starts it is a quick process.Heat peanut oil in wok or large frying pan over high head. Add red bell pepper. Cook for 1-2 minutes, stirring. Add onion, cook for 1-2 minutes, stirring. Once veggies are softened remove from pan and set aside. Add garlic to pan for a few seconds, then add jalapeno. Cook for about 30 seconds. Add shrimp, fish sauce, soy sauce and water for 1-2 minutes or until shrimp is cooked (Note that the fish sauce has a strong smell when added but the sugar fixes it so it tastes way better). Add sugar and cook for 30 more seconds. Return peppers and onions and heat throughAdd fresh basil and stir until just beginning to wilt. Serve over chosen side.
