1/2 onion, 2 cloves garlic, 3 celery stalks chopped small, 1 small carrot chopped small. chicken breast cut into small pieces. 32 oz of low sodium vegetable broth and 2 cups water. 2 cups cherry tomatoes, 1 small red tomato, 1/4 cup basil, 1tsp oregano, 1 tsp thyme, 1/2 tsp sageand 1/4 tsp red pepper flakes (cayenne). 2 sliced zucchini, 1 cup cooked pinto beans, 1/2 cup cooked barley, 1/2 bunch spinach. Parmesan cheese to garnish.

Here is how you make Bean and Barley Minestrone Soup:

Use 1 cup previously cooked pinto beans (or canned) and 1/2 cup cooked barley. Prepare a large soup pot with 2-3 tablespoons of olive oil.Chop 1/2 an onion and start to saute it. It is best if is begins to caramelize (turn a bit brown). Add 2-3 chopped garlic cloves. Do not burn the garlic. Chop 3 stalks of celery and 1 carrot and add to pot. Stir and continue letting it cook on low while you cut the tomatoes and zucchini. Cut tomatoes and 2 zucchini and set aside until the celery and carrot have softened. Make an empty space on one side of pot. Add small pieces of chicken breast (optional) and cook for several minutes until it is cooked through. Add tomatoes, zucchini and spices and stir with the rest of the ingredients. Add pinto beans and barley. Add vegetable broth and water. Continue cooking until the zucchini has softened, but is still somewhat crunchy. Makes 6 servings.
