2.5 lbs gold potatoes
1 Tbsp canola oil
1 Tbsp Better Than Bouillon - vegetable base
3 Cup water
2 Tbsp bulk cheese powder
1 can fat-free evaporated milk


How Do I Make Creamy Cheesy Potato Leek Soup?

Here is how you make Creamy Cheesy Potato Leek Soup:

Trim and wash leeks and potatoes thoroughly. Heat the canola oil in a heavy duty sauce pan on low heat. Dice the heads of the leeks (root end only), and soften in the canola oil. Put lid on pan. Peel half (or all) the potatoes and dice. Add to the leeks in the pan, and stir. Place the lid back on. Dissolve the bouillon in 1 cup of hot water, and then add it to the leek/potato mixure with the other 2 cups of water. (No salt is needed because the bouillon has sodium) Simmer on low, about 45 minutes. After the potatoes are tender, scoop out about 2 cups of the soup and put in a blender. Add the cheese powder and the can of evaporated milk to the blender, and blend until ingredients are smooth. Add this back into the soup. If soup is too thick, add a littlel more water to desired consistency. Sitr, and continue to heat for another 10 minutes.
