Here is how you make Fat Free Creamy Potato Soup:

Bring 6 cups stock to boil. (To cut down on salt, use water and add a little more seasoning.) Add potatoes, carrots and onion, lower heat and cook to tender (about 20 minutes). Add seasonings. Remove from heat. Spoon 1/2 of mixture into a blender (about half the potatoes and half the stock). Puree until liquified. Return the "creamy" soup into the cooking pot. Stir. Add the skim milk and fat free sour cream. Stir and serve!Options: Add bacon bits, low-fat croutons, or a sprinkle of grated fat free cheese.
