1.3 pound package of lean or extra lean ground turkey
2 cans of reduced sodium chicken broth
2 cups of water
2 cups or cans of Italian stewed tomatoes
1 package of frozen mixed vegetables
2 cups of uncooked elbow macaroni or other small pasta
oregano and other seasonings of your choice (red and black pepper, garlic, a smidgen of salt, marjoram, and allspice are my usual tastes)


How Do I Make Turkey and Vegetable Soup?

Here is how you make Turkey and Vegetable Soup:

1.) Brown the turkey meat in a pan on the stove2.) Pour the broth and the water into a crock pot or stock pot, add seasonings and let it warm over low-medium heat3.) When the turkey is cooked through, add to the pot of broth along with the stewed tomatoes. Let simmer for an hour or two, if in a crock pot.4.) Add frozen mixed vegetables, and let simmer for another two hours or more.5.) 10-20 minutes prior to serving, add macaroni. If you're planning on saving some of the soup for leftovers, add only half the macaroni as it will absorb all of the liquid when stored.6.) Serve into bowls, makes 6-8 large, hearty bowls of soup.
