Here is how you make Curried Squash:

Heat EVOO in a large soup pot and add the onion. Cook for about 3 minutes. Add the squash, garlic and curry paste and cook another 3 minutes.Add the tomatoes and the vegetable broth. Bring to a boil, then reduce heat, cover and simmer for 15 minutes. Remove lid and cook another 10-15 minutes or until squash is tender.
