Preheat oven to 350.Spray a baking sheet with oil.Cut squash in half length wise & remove seeds.Place squash cut side down on baking sheet & bake for 30-40 minutes.Meanwhile chop onion & saute with olive oil over medium heat until tender.Dice garlic & add to pan with onion. Cook approx 3-5 minutes.Dice tomatoes & add to pan. Cook until warm all the way through.Add salt & pepper.Remove squash from oven.Scrape inside with a fork to make noodle like strings.
