This is a pretty heavily modified version of the Post Punk Kitchen's Rustic Winter Stew. The original recipe is incredibly forgiving and adaptable, which is how this came into being.You can use whatever kind of broth you want in place of the bouillon/water/red wine/worcestershire combo but those things together have given me the heartiest taste out of everything I have tried.

4 plum tomatoes, diced
1 large parsnip, skinned & sliced

1/3 cup Red Wine
4 cups water
1/2 tblsp vegan worcestershire sauce
4 medium red potatoes, scrubbed & cubed
3/4 cup of dried lentils
1/2 cup frozen edamame, out of shells
1/2 cup frozen spinach

Here is how you make Vegan Winter Stew:

Spray a large stew pot with cooking spray.Sautee leeks for 3-4 minutes. Add garlic, tomatoes, and parsnip.Sautee until leeks are translucent.Combine the bouillon with the wine, water, and worcestershire.Add to stew pot.Add the cubed potatoes and lentils.Simmer for 20 minutes, stirring occasionally.Add frozen edamame and spinach simmer another 10-15 minutes until edamame and spinach are heated through and potato is cooked through.Serving Size: 5 large servingsNumber of Servings: 5Recipe submitted by SparkPeople user JENNYMACK422.
