This is the Frankenstein-esq fusion of a stuffed eggplant recipe, and my own amateur yogurt curry. It's missing something...I shall play around with the recipe some. Smush up garlic and cilantro (grind into a paste if you feel so inclined) and mix with 2 tbsp yogurt. Add cooked pieces of sausage (can also be used as a marinade overnight for any other kind of meat or veggie)2. Preheat oven to 400F. Cut eggplant in half, brush sides with olive oil, and put in the oven to cook for 30 minutes face-up.3. Meanwhile, heat remaining oil in pan and add 2tbsp of curry. Wait for sputtering, and then add yogurt/meat/veggie mixture. Fry until oil shows on edges. Continue adding remainder of yogurt and curry a little bit at a time. This is also the opportune time to put in any other desired spices, such as cardamom, carraway, cloves, bay leaves, etc.4. While mixture is simmering, you'll probably have the opportunity to scoop out the eggplant innards when the eggplant has cooled enough to handle. Once you have, add these to the mixture.5. Add 1/2 cup instant rice and simmer for 5 min and/or until meat is cooked. The rice is here to give the curry a more stuffing-friendly consistancy. Also, it's yummy :)6. Put the mixture into the shells, and return to oven for another 10 or so minutes.It must be mentioned that this is quite a filling little meal, and half a shell usually does me just fine.
