mix the ground turkey with the egg, crushed saltines, chopped peppers and onions and some of the salsa. Cover a cookie sheet with saran wrap. Press the meat misture onto the saran wrap in a layer about half an inch thick. Make a uniform rectangle out of it. Sprinkle the mozzerella and mushrooms over the meat rectangle. Roll jelly roll fashion, removing the plastic wrap as you roll. Seal the edge. Flatten the ends. Place in an oiled loaf pan and pour the remaining salsa on top.
