2 red bell peppers
2 yellow bell peppers
2 Cups Morningstar Farms burger "crumbles"
2 Cups long grain brown rice
1 can petite diced tomatoes
1.5 Cups black beans
.5 Cup diced onion
1 tsp cumin
.5 tsp black pepper
.5 tsp. white pepper
salt to taste


How Do I Make Colorful Stuffed Peppers?

Here is how you make Colorful Stuffed Peppers:

You can either use canned black beans or soak from dried. I prefer the soak from dried as they tend to be firmer. Pour black beans, diced tomatoes and all spices into large skillet to simmer while you prep everything else. Dice onions and put into skillet with tomato mixture. Allow mixture to simmer at least 30 minutes.Cook rice. Preheat oven to 350F.Wash and core peppers. Slice in half lengthwise. Spray baking dish lightly with cooking spray or add small amount of water so peppers do not stick to pan. Add rice and burger crumbles to tomato mixture and stir well. Once all is heated through, spoon mixture into halved peppers until slightly mounded. You may have some left over mixture. Place a piece of foil over baking dish and place in oven for 45 minutes. After baking remove foil and check "done-ness". Peppers should be tender. Serve and enjoy!
