4 oz. ground turkey - sauteed
1 can of whole or diced tomatoes - no salt
1 tbsp. grated Romano or Parmesean cheese
2 medium eggs, lightly beaten
1 oz. plain breadcrumbs
1 tsp. onion powder
1 tsp. garlic powder
2 tbsp. minced fresh basil or 1 tsp. dry basil
4 small bell peppers, tops removed, cleaned
3 tbsp. organic Heinz ketchup
2 tsp. brown sugar


How Do I Make Healthy Stuffed Red Bell Peppers?

Here is how you make Healthy Stuffed Red Bell Peppers:

Steam the rice and saute the ground turkey. Cool both. Clean peppers, removing tops as close to the top as possible. Slice off any bits of pepper left on the tops. Place in a large bowl. Add 1/2 of the diced tomatoes and sauce to the bowl as well as cheese, eggs, breadcrumbs, and spices. Mix. Add rice and turkey, mix. Stuff each pepper and place on bottoms in a small baking dish. Pour the rest of the tomatoes over the tops of the peppers. Cover in foil and bake in a 400 degree oven for 35 minutes. Meanwhile, combine ketchup and brown sugar in a small saucepan and heat until smooth. Spread over the top of each pepper. Leave foil off and raise heat to 450 degrees. Cook an additional 10 minutes.
