1 package Knorr Taco rice, or your favorite Spanish rice
1 can corn
1 can black beans
1 can pinto beans (not refried beans)
about 1.5 c of salsa of choice
about 1/2 cup shredded cheese
6 Bell peppers (I prefer anything but green bell peppers but you can you whatever you like)


How Do I Make Meatless Stuffed Peppers?

Here is how you make Meatless Stuffed Peppers:

1. Preheat oven to 3502. You need to steam the peppers, I have a steamer that fits in the microwave. Cut the tops off and empty the seed. Steam peppers until fork tender3. Meanwhile, while peppers steam, make rice as directed on package. While the rice cooks open beans, drain and rinse, drain corn. 3. When the rice is finished per package directions. Add the beans, corn and 1 c salsa. Stir and cook about 5 minutes til warmed through.4. Put steamed in an oven safe dish that is just large enough to fit the peppers in firmly and to keep them standing. Divide the filling among the peppers, packing it firmly in but not splitting the peppers. Fill to the top. Take the reserved .50 c of salsa and put a little bit on top of each pepper.5. Bake at 350 for about 30 min, until peppers are tender and the filling is hot. Take out and divide the .50 cheese among the top of each of the peppers.
