1 can (28 oz.) whole peeled tomatoes, no salt added
1 cup uncooked long-grain brown rice
3 tbsp. olive oil
1-1/3 cups frozen sweet corn

Here is how you make South-of-the-Border Stuffed Red Peppers:

Makes 6 servings of 1 pepper each.Prepare the rice with 1 tbsp of oil and 2.5 cups water.Cut the tops from the peppers. Remove the seeds, stems, and membranes and discard. Dice the pepper tops.Saute half of the onion and the diced pepper tops in the remaining oil for about 5 minutes. Chop the tomatoes and add to the saute, including the liquid. Bring to a boil and cook 5-7 minutes until somewhat thickened. Add seasonings to taste, then pour the mixture into a slow cooker.Put remaining onion and ground turkey into skillet. Cook until meat is browned. Remove from heat and drain. Add rice and corn, and season to taste.Spoon meat mixture into peppers. Do not overstuff. Arrange in a single layer in slow cooker.
