4 Green Bell Peppers -- halved from stem to bottom and cleaned (approx 75 grams each)
1.5 cup Canned Yellow Sweet Corn (approx 1/2 can)
1.5 cup Canned Black Beans (approx 1/2 can)
1 pound (16 oz.) Lean Ground Chicken
1 10 oz. can RoTel
1 cup of 2% milk shredded cheese (such as Colby Jack blend)
1 packet of Taco Seasoning


How Do I Make Southwestern Stuffed Bell Peppers?

Here is how you make Southwestern Stuffed Bell Peppers:

Preheat the oven to 350.Halve the bell peppers long ways from the stem to the bottom clean out the seeds and excess ridges. Place the peppers in a pot of water on high heat until they boil for approximately 5 minutes. This will soften the peppers. Once the peppers have soften, carefully remove them from the water so to not tear or break the pepper. Allow them to cool for easy handling later.While the peppers are boiling, start the ground chicken in a large pan. Cook half way and then add the can of Rotel, drained very well from excess liquid. Complete cooking the ground chicken. Once finished, drain any excess liquid. Prepare the meat following the taco seasoning instructions. Add the black beans and corn (both drained of excess liquid). Cook the meat mixture down until any excess liquid is gone.On a baking sheet or casserole dish, place your bell peppers with the empty cavity facing up. Evenly distribute the meat mixture across all 8 halves. Place in the oven for 15 to 20 minutes to finish off.In the last 2 or 3 minutes, sprinkle shredded cheese across the top of each stuffed pepper.Serving Size: Makes 1 halved and stuffed bell pepper.Number of Servings: 8Recipe submitted by SparkPeople user KRISTICOCHRAN.
