1/2 c. quinoa, rinsed
4 green peppers
3/4 extra lean ground turkey
1 large onion, chopped
3 t dried parsley flakes
2 t. paprika
1/2 t. salt
1/4 t. dried pepper flakes
1/4 t. pepper
2 minced garlic cloves
2 (8 oz.) cans tomato sauce
1/2 c. drained corn
1/2 c. shredded reduced fat cheddar


How Do I Make LJF Quinoa Stuffed Peppers?

Here is how you make LJF Quinoa Stuffed Peppers:

Cook quinoia 12- 15 minutes in 1 c. water. Drain tomatoes. Reserve liquid. Cut peppers in half. Soften briefly in microwave. Cook turkey onion, parsley , paprika, salt, pepper, and pepper flakes over medium heat until meat is nolonger pink. Add garlic cook 1 minute. Stir in one 8 oz can tomato sauce, corn , quinoa, and drained tomatoes. Heat through. Spoon into pepper halves. Place in sprayed 13 x 9 pan. Combine reserved juice and remaining can of sauce. Pour over peppers. Cover and bake at 350 for 30-35 minutes.
