How Do I Make Roasted Stuffed Bell Peppers?

Here is how you make Roasted Stuffed Bell Peppers:

Preheat oven to 400 degrees. Cut peppers in half lengthwise, leave stems and remove seeds and inner membrane. Brush with olive oil and place in shallowbaking pan, skin side up. Roast for 20 minutes until skin starts to blacken in spots.While peppers are roasting, finely chop onions and mushrooms. Dice sausage links. . Spray medum-sized skillet wit olive oil - enough to coat bottom ofskillet. Saute onions, mushrooms, sausage and garlic for about 10-15 minutes. Remove from heat. Stir in cheese. Once peppers are roasted, remove the baking pan from oven, reduce oven to 375 degrees. Turn over each pepper half and fill with sausage/cheese mixture. Top each half with optional pasta sauce and then top with each with cup (or less if preferred) of mozzarella cheese.
