Here is how you make Shrimp Stuffed Portobello Mushrooms:

Remove stem from mushrooms, chop and set aside. Scrape gills out of mushrooms.Melt butter & EVOO in pan, add onion, bell pepper and mushroom stems, simmer a few minutes, then add shrimp, simer til shrimp is done, don’t over cook. Remove from heat and pour in bowl, with all juices. Add Cream Cheese, stir, add everything else but ½ cheddar cheese.Stuff mushrooms, sprinkle with cheddar cheese, bake at 325 for 45 minutes.
