- 1/2 kb of lean ground turkey
- 3 medium to large tomatoes
- 1/2 cup of brown rice (uncooked)
- 1/2 can of Rotel tomatoes (or other diced tomatoes w/ green chiles)
- 3/4 cup of Mexican style cheese
- 1 tbsp of chili powder
- 1 tsp garlic
- 1 tsp oregano
- 1 tsp cumin
- salt and pepper to taste


How Do I Make Spicy Stuffed Tomatoes?

Here is how you make Spicy Stuffed Tomatoes:

Cook the brown rice according to instructions. While rice is cooking thinly slice the tops off the tomatoes and hollow out. Place ground turkey in a pan. Add garlic, chili powder, oregano, salt, pepper, and cumin. After turkey has browned add diced tomatoes. Once turkey had browned mix with 3/4 of the cheese and rice. Spoon the mixture into the tomatoes and place in a casserole dish. Top off with a few sprinkles of cheese.
