1/2 small red bell pepper, chopped
1 Tbsp I can't believe it's not butter light
1 Tbsp sugar free maple syrup
1/2 cup fat free cheddar cheese, shredded

Here is how you make Stuffed Butternut Squash:

1. Preheat oven to 375 degrees.2. Cut squash in half lengthwise, remove seeds. Place cut side down on baking dish with small amount of water and cook 40 minutes or until soft to the touch.3. In a skillet over medium heat, add oil. When hot, add apples and cook 4 minutes. Add sausage and cook until heated through and apples are soft. Transfer mixture to a large bowl to cool.4. Remove squash from oven and place cut side up. Drain any liquid in dish and wipe dry.5. Scoop out flesh, leaving approx 1/4" on skins, and add to sausage mixture in bowl. To this add red pepper, butter, syrup, and cheese. Fold gently together until mixed well and spoon back into skins.6. Lightly spray baking dish with cooking spray. Place squash on the dish and bake, uncovered, for 15 minutes. Turn broiler on high and continue to cook an additional 2 - 3 minutes or until cheese is browned and bubbly.Serving Size:?Makes 4 servings
